CHICKEN CASSEROLE 
1 (2 lb.) chicken
3 tbsp. butter
1 c. onion
3 cloves garlic
1 sm. jar green olives
3 c. tomatoes
1 tsp. oregano
1/2 tsp. salt
1 c. water
1/2 tsp. pepper
1 c. red wine
3 c. instant rice
3 c. water

Cut chicken up into pieces. Brown lightly and place in large casserole dish. Saute onion and garlic until lightly browned. Add tomatoes, 1 cup water, green olives, salt, pepper, oregano, and red wine. Bake for 30 minutes. Pour over chicken and bake at 350 degrees until chicken is done.

Cook rice as directed on package. Serve chicken over rice.
