FRUIT CAKE 
4 c. cake flour
1 tsp. mace
1 tsp. nutmeg
3 tsp. cinnamon
1/2 tsp. baking soda
3 lbs. dates
2 lbs. raisins, seedless
1 lb. citron, sliced
2 c. pecans
1 lb. butter
2 c. light brown sugar
10 eggs, separated
1 c. coffee, brewed

Sift flour, spices and soda together twice. Mix with fruits and nuts. Cream butter and sugar together until fluffy. Beat yolks until thick and whites until stiff. Add to creamed mixture. Add flour and fruit mixture. Add coffee. Pour into greased pans. Bake at 300 degrees for 3 to 4 hours.
