PINEAPPLE CHEESECAKE 
1 3/4 c. crushed graham crackers
1 stick butter, room temperature
1/4 c. sugar

FILLING:

1 med. size can crushed pineapple
8 or 12 oz. cream cheese, room temperature
1/2 c. sugar
1/8 tsp. cinnamon
1/2 tsp. vanilla
2 eggs, slightly beaten

TOPPING:

1 c. sour cream
3 tbsp. sugar
1 tsp. vanilla

Crust: Mix together. Press in springform pan. Bake at 375 degrees for 5 minutes.

Filling: Drain pineapple. Set aside. Mix together with mixer for 1 minute all other ingredients. Add crushed pineapple. Mix together. Pour into baked crust. Bake at 325 degrees for 35 minutes.

Topping: Mix ingredients. Pour on cheesecake while hot. Chill until firm.
