PINEAPPLE CHEESECAKE 
1 small can crushed pineapple
1 pkg. lemon Jello
1 (8 oz.) cream cheese
1/2 c. sugar
2 tsp. vanilla
1/2 c. sugar
1 small can evaporated milk
1 tsp. lemon juice
1/4 lb. graham crackers (crushed)
1 stick butter

Boil pineapple, add Jello. Set aside to cool and thicken slightly. Cream cheese, sugar and vanilla together. Add to Jello, pineapple mixture.

Whip milk with lemon juice. Add cheese, pineapple and Jello mixture, milk and blend well.

Melt butter. Add rolled cracker crumbs and sugar. Line bottom of 9 x 9 inch pan with 3/4 crumb mixture. add cheese mixture and sprinkle rest of crumbs on top and chill.
