EASY ENCHILADAS 
1 1/2 lbs. ground beef
2 cans tomato sauce
1 c. olives, sliced
1/2 lb. cheddar cheese
1 1/2 tsp. vinegar
2 tbsp. chili powder
1 pkg. tortillas
1/2 med. onion, chopped
1 clove garlic
Salt & pepper
1 1/2 c. water
2 1/2 tbsp. flour, mixed with 1/2 c. cold water

Brown meat, onions and garlic. Add tomato sauce, 1 1/2 cups water, vinegar, olives and seasoning. Simmer 20 minutes. Thicken sauce with mixture and bring to boil. Remove from heat. In greased 9"x13" casserole, place layer of sauce and layer of tortillas until all is used, ending with sauce. Top with cheese. Bake at 350 degrees for 20 to 30 minutes.
