EASY ENCHILADAS 
1 1/2 lb. ground beef
1 med. onion
12 oz. can enchilada sauce
12 oz. can tomato sauce
1 c. shredded mozzarella cheese
1 c. shredded cheddar cheese
10 flour tortilla soft large shells

Brown ground beef with onion and drain. Add to this 1/2 cup of each cheese. Mix enchilada sauce and tomato sauce. Heat to simmering in frying pan. Mix 1 cup with ground beef mixture. Dip shells one at a time in remaining sauce. Fill with beef mixture and roll up. Place shells in 9 x 13 inch greased pan. Top with any remaining sauce. Cover with foil and bake at 350 degrees for 30 minutes. Uncover - top with remaining cheese and bake additional 15 minutes. May eat as is or garnish with lettuce, tomatoes, more cheese, sour cream and ripe olives.
