BANANA CHIFFON CAKE | |
2 1/4 c. sifted cake flour 1 1/2 c. sugar 3 tsp. baking powder 1 tsp. salt 1/2 c. oil 5 egg yolks, unbeaten 1 tbsp. lemon juice 1 c. mashed bananas Beat with a wooden spoon until smooth. Beat 1 cup egg whites with 1/2 teaspoon cream of tartar until quite stiff. Do Not underbeat! Fold banana mixture into egg whites. Bake in tube pan at 350 degrees about 65 minutes. Cool upside down. |
