BANANA BREAD | |
1/2 c. butter 1 1/2 c. sugar 2 eggs, slightly beaten 1 c. mashed banana 1 tsp. vanilla or lemon extract 2 c. pastry or cake flour 1/2 tsp. baking soda (1 tsp. if sour milk or cream is used) 1/4 tsp. salt 1/2 c. milk or cream, sweet or sour Preheat oven to 350 degrees. Grease 9 inch square pan or loaf pan. Cream butter until light and fluffy. Gradually beat in sugar. Add eggs. Beat thoroughly. Add mashed banana and vanilla. In separate bowl sift together cake flour, baking soda, salt. Add the flour mixture to the butter mixture alternately with milk or cream. Spoon into pan (9 inch square pan) and bake 40 minutes; for loaf pan bake 55 to 60 minutes. |
