VIDALIA ONION CASSEROLE | |
8 lg. Vidalia onions, cut in chunks 1/4 c. (half stick) butter 1/2 c. uncooked rice 1 c. boiling salted water 1 c. grated Swiss cheese 2/3 c. half & half Saute onions in butter until transparent but not brown. Add rice to boiling water, cook 5 minutes covered on low heat. Place rice, onions, and cheese in 2- quart baking dish. Combine well and stir in half & half. Bake 1 hour at 325 degrees. Serves 8-10. |
