APRICOT AND RAISIN CHUTNEY 
1 lb. dried apricots, soaked overnight
1 lg. onion, thinly sliced
1 tbsp. salt
1 1/2 c. sugar
3 oz. seedless raisin
1 c. vinegar
10 oz. whole pickling spice

Drain fruit, cut in halves and put in pan with salt, onion, sugar, raisins, and vinegar. Tie spice in bag and put in pan. Bring to boil and simmer 50-70 minutes. Remove spices. Pour into jars and seal.
