FESTIVE SWEET POTATOES | |
3 c. cooked mashed sweet potatoes 1/2 c. sugar 1/4 c. buttermilk 1/3 c. melted butter 1 tsp. vanilla 2 eggs, beaten 1 c. flaked coconut 1 c. packed brown sugar 1/3 c. flour 1/4 c. melted butter 1/3 c. chopped pecans Combine first 6 ingredients mixing well with mixer. Spoon into greased 8 inch square pan. Combine remaining ingredients and sprinkle over top of sweet potatoes. Bake at 375 degrees for 25 minutes or until golden brown. Bakes fast, watch. Make ahead of time needed. |
