CUCUMBER SOUP 
2 tbsp. butter
2 tbsp. grated onion
1/4 tsp. curry powder
1 c. peeled, diced raw cucumbers
1 can cream of mushroom soup
1 can chicken broth
1/2 c. milk
Salt and pepper to taste

Melt butter, saute onion until soft. Stir in curry, add cucumber and enough chicken broth to simmer until cucumber is tender; about 5 minutes. Add soup and milk. Bring to boiling point. Serve hot or cold.

One of my favorite and so easy to make. Not partial to heavy seasoning so I just use half the curry powder. You can't go wrong with this soup hot or cold and takes such a small amout of effort and time to make.
