SAUSAGE COFFEE CAKE 
1 lb. bulk sausage
1/2 c. chopped onion
1/4 c. grated Parmesan cheese
1/2 c. grated Swiss cheese
1 egg, beaten
1/4 tsp. hot sauce
1/2 tsp. salt
2 tbsp. parsley, chopped
2 c. biscuit baking mix
3/4 c. milk
1/2 c. mayonnaise
1 egg yolk
1 tbsp. water

Brown sausage and onion; drain. Add cheeses, beaten egg, hot sauce, salt, parsley. Make batter of biscuit mix, milk and mayonnaise. Spread 1/2 of the batter in a 9"x9"x2" greased pan. Pour in sausage mixture, then spread remaining batter on top. Mix egg yolk and water then brush on top.

Bake in a 375 degree oven for 25 to 30 minutes or until cake leaves edges of pan. Cool 5 minutes before cutting. Recipe doubles easily in a 9"x13" pan. Freezes well.
