HOT SPICED BEETS (Sugar Free) 
2 c. fresh or canned dietetic beets, sliced
1/2 c. water
2 cloves
1 bay leaf
1 tbsp. red wine vinegar
1 packet Equal

Drain the juice from the beets, if using canned. Add 1/2 cup water to saucepan and bring to a boil with the cloves and bay leaf. Add the vinegar (and beets, if using fresh). Heat 10 minutes. Remove the cloves and bay leaf.

If using canned beets, add the beets to the hot liquid and heat through for about 1 minute. Remove from heat and stir in Equal. Serve hot.

Makes 4 servings at 37 calories each. Diabetic exchanges: 1 vegetable.
