BROCCOLI AND POTATO SUPREME 
3 c. hot mashed potatoes (5-6 med. ones)
1 pkg. (3 oz.) cream cheese, softened
1 egg
1/4 c. milk
1 tbsp. butter
1 can French fried onions
1 pkg. frozen broccoli spears, cooked & drained
1 c. Cheddar cheese, shredded

Whip together potatoes, cream cheese, egg, milk and butter until smooth. Season to taste with salt and pepper. Fold in 1/2 can of onions. Sprinkle the potato mixture over the sides and bottom of an 8 x 12 inch baking dish, to form a shell. Bake uncovered for 25-30 minutes in a 350 degree oven.

Arrange the broccoli spears in the potato shell and sprinkle with cheese and the remaining onion. Bake uncovered 5 minutes longer. We really love this dish!
