POTATO BROCCOLI PIE (287 CALORIES) | |
Crust, bake at 350 degrees for 15 minutes 1 med. size potato, pared 3/4 c. shredded processed American cheese 1 (9 inch) unbaked pastry shell, thawed if frozen 1 pkg. (10 oz.) frozen chopped broccoli, thawed 1/2 c. skim milk 2 eggs, lightly beaten 2 tbsp. all purpose flour 3/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. ground nutmeg Preheat oven to 350 degrees. Parboil potato in boiling water to cover in small saucepan for 10 minutes. When cool enough to handle, grate coarsely into large bowl. Sprinkle 1/3 of the cheese over the bottom of the pastry shell. Bake in preheated oven for 5 minutes. Transfer to wire rack. Add the remaining cheese, broccoli, milk, eggs, flour, salt, pepper and nutmeg to the potato. Stir until well combined. Set pie crust on baking sheet. Pour broccoli filling into pie crust. Bake in 350 degree oven for 50 to 60 minutes until center is set. Serve warm. |
