VEGETABLE PITA'S 
1 pita pocket, cut in half
1 c. raw broccoli pieces
1 c. raw cauliflower pieces
1 oz. Mozzarella cheese, cubed
1 tbsp. raw onion, diced
2 tbsp. Ranch dressing

Blanch raw broccoli and cauliflower in boiling water for 3 minutes. Mix vegetables, cheese and onions in bowl; add dressing and mix. Fill pita pockets with mixture and microwave on high for 1 minutes. Serve. May ad cubed cooked chicken breast if you like meat too. Serve 1.

Since microwave ovens vary in power, you may need to adjust your cooking time.
