B. B. Q. VEGETABLE PITAS | |
3 tbsp. canola oil 3 sm. onions, thinly sliced 1/2 c. barbecue sauce 1 c. diced red pepper 2 avocados, peeled, seeded and mashed 2 c. grated Mozzarella 6 pitas, sliced in half In small saucepan, saute onions in oil. Cook for 5 minutes and stir in barbecue sauce. Divide mashed avocado and Mozzarella evenly between pita halves. Distribute onions and red peppers in pitas and serve immediately. Serves 12. |
