VEGETABLE PITA MELT 
1/4 c. each broccoli and cauliflower florets, blanched
2 tbsp. each sliced scallions and diced tomatoes
1 1/2 tsp. buttermilk salad dressing
1 whole wheat Pita
1 oz. cheddar cheese, shredded or feta cheese, crumbled

In small mixing bowl, combine all ingredients except pita and cheese, mixing well until thoroughly coated. Cut pita in half and open each half to form a pocket. Fill each pita with half of the veggie mixture, and half the cheese. Set on paper plate and microwave on high for 40 seconds. You can substitute 1/4 cup each of cooked asparagus spears and mushrooms for the broccoli and cauliflower and 2 tablespoons each of diced onion and red bell pepper for the scallions and tomato.

Since microwave ovens vary in power, you may need to adjust your cooking time.
