BACON CHEESE AND ONION POTATOES 
2 lbs. potatoes
1/2 c. bacon, cooked and shredded
1/2 c. green onions, chopped
3 tbsp. butter and flour
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. celery seed
1 1/2 c. milk
1 c. Velveeta cheese

Cut potatoes in 1/4 inch slices. Precook slices in boiling water lightly salted for 5 minutes. Drain thoroughly. Layer potatoes, bacon, and onions in greased 2 quart casserole. In saucepan, melt butter. Add flour, salt, pepper, and celery seed. Cook, stirring, 2 minutes. Gradually add milk, stirring constantly, and cook until thickened. Add cheese and stir until melted. Pour sauce over potatoes and cover. Bake at 350 degrees for 30 minutes. Remove top and continue baking for 15-20 minutes.
