CAULIFLOWER CHEESE WITH BACON
AND ONIONS
 
1 lg. cauliflower, broken into flowerets
1 c. bacon, chopped
2 onions, chopped
1 1/4 c. milk
1 1/4 c. cheese, grated
Parsley
Salt & pepper
3 tbsp. butter
1/4 c. flour
3 tbsp. cream
Nutmeg

Boil cauliflower 10 minutes, drain. Saute bacon, set aside. Saute onion in bacon fat and butter until soft. Add flour and stir for 1 minute. Add milk and bring to a boil, stir constantly. Remove from heat, add cream and cheese. Stir in bacon and seasonings. Pour over cauliflower in casserole. Bake at 375 degrees for 30 to 45 minutes until golden and bubbly.
