SPINACH BREAD 
2 boxes chopped frozen spinach, cooked and drained as directed
1/4 lb. Mozzarella cheese, diced or slivered
1/4 to 1/2 c. "extra virgin" olive oil
1 lg. toe garlic, chopped fine
1 can flat fillets of anchovies, chopped fine
2 tbsp. grated Italian cheese (Romano or Parmesan)

Combine all ingredients. Spread on French bread, fill pocket (pita) bread and or use bread dough, etc. If using bread dough, shape into small loaves. Place mixture in center. Fold bread, using egg white to seal and bake until bread is done. Toast or heat in oven until bread and mix is hot. Artichoke hearts can be used in place of spinach.
