PRUNE WHIP PIE | |
Mix 1/4 lb. of cornflour, teaspoon of baking powder and a tablespoon of icing sugar in medium bowl. Now rub in 4 ozs. of butter or lard. Beat up the yolk of an egg and stir in. Knead into a light dough. Roll out and put in baking dish and bake in hot oven till a golden colour. Meanwhile, wash and soak 1/2 lb. of prunes, simmer in water till tender, and liquid practically cooked away. Stone prunes and cut into small pieces. Add 2 tablespoons of sugar and same of walnuts. Mix together and lastly, add whites of two eggs beaten stiff. Fill pastry case and bake in moderate oven for 20 minutes. When cold, garnish with whipped cream.
