TURNIP PUFF 
2 c. cooked, mashed turnips, cooled
1 c. bread crumbs
1/2 c. melted butter
1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 eggs, separated

Combine turnips, bread crumbs, butter, sugar, salt, pepper, and beaten egg yolks

Beat egg whites until stiff; fold into turnip mixture. Spoon into a lightly greased 1 quart casserole. Bake at 350 degrees for 40 minutes. Yield: 4 to 6 servings.
