EASY APPLE COFFEE CAKE 
1 (1 lb., 2 1/2 oz.) pkg. yellow cake mix
1 (3 3/4 oz.) pkg. instant vanilla pudding
4 eggs
1 c. dairy sour cream
1/2 c. salad oil
2 apples, pared, slices
1/2 c. chopped walnuts
1/2 c. sugar
2 tsp. cinnamon

Combine cake mix, pudding mix, eggs, sour cream and salad oil. Beat 5 minutes. Pour 1/2 batter into greased 10 inch tube pan. Arrange 1/2 of apple slices on top; sprinkle with combine mixture of nuts, sugar and cinnamon. Add remaining batter. Top with apples and sugar mixture. Bake at 350 degrees for 1 hour. Cool in pan 30 minutes. Freezes well.
