EASY APPLE COFFEE CAKE 
1 (2 lb. 2 1/2 oz.) pkg. yellow cake mix
1 (3 3/4 oz.) pkg. instant vanilla pudding mix
4 eggs
1 c. sour cream
1/2 c. oil
1/2 c. chopped walnuts
1/2 c. sugar
2 tsp. cinnamon
2 med. apples, peeled, cored & sliced

Combine cake mix, pudding mix, eggs, sour cream and oil. Beat for 5 minutes. Combine nuts, sugar and cinnamon. Pour 1/2 of batter into greased 10 inch tube pan. Arrange 1/2 of apple slices on top of batter; sprinkle with 1/2 of sugar-nut mixture. Cover with remaining batter. Arrange remaining apple slices on top of batter. Top with remaining sugar-nut mixture. Bake at 350 degrees for 1 hour. Cool cake in pan for 30 minutes. Also good made with blueberries.
