CARROT COOKIES 
1 c. shortening
1 c. mashed cooked carrots
1 egg beaten
2 c. flour
3/4 c. sugar
1 tsp. vanilla
2 tsp. baking powder
1/2 tsp. salt

Cream shortening and sugar. Add egg, carrots and vanilla. Sift flour, baking powder and salt, add to creamed mixture, stirring well. Place by spoonsful onto a cookie sheet, bake for 20 minutes in a 350 degree oven. Cool. Ice.

Icing:

1 tsp. butter
1 1/2 c. powdered sugar
Enough orange juice to make spreading consistency

Beat until smooth, top with pecan half.
