CARROT COOKIES 
1 c. shortening
1 c. sugar
1 egg, slightly beaten
1 c. cooked mashed carrots
2 tsp. baking powder
2 c. flour, sifted
1/8 tsp. lemon extract
1 tsp. vanilla
Peeling or 1 orange, grated fine (save 1 tbsp. for icing)

ICING:

2 c. powdered sugar
1 tbsp. grated orange peel
1 tbsp. butter, melted
1 tbsp. lemon juice
1 tbsp. orange juice

Cream shortening and sugar. Add egg and carrots. Sift flour, baking powder and salt together. Add dry ingredients to mixture. Drop from spoon on greased baking sheet. Bake at 350 degrees for 15 minutes. Mix ingredients for icing until smooth. Ice cookies while still warm.
