BAKED APPLE CUPLETS 
1/4 c. sugar
1/2 tsp. cinnamon
6 baking apples, pared & cored
2/3 c. flour
1/4 tsp. baking powder
1/8 tsp. salt
2/3 c. sugar
1 beaten egg
1 tsp. vanilla
3 tbsp. melted butter

Combine 1/4 cup sugar and cinnamon. Roll apples in mixture. Place in buttered custard cup. Fill apple centers with remaining sugar/cinnamon mixture. Set aside. Sift flour, baking powder, salt and 2/3 cup sugar.

Combine egg, butter and vanilla. Add to dry ingredients. Beat well. Spoon 2 tablespoons batter over each apple (any leftover batter evenly distribute on apple cups). Bake in 375 degree oven for 45 minutes until apples are tender. Serve at once. Hot. Serves 6.
