BAKED CARROT MOLD 
1 c. butter
1 c. brown sugar
2 eggs
2 1/2 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
2 tbsp. water
2 tbsp. lemon juice
3 c. grated carrots (loosely packed into measuring cups)

Cream butter well. Add brown sugar and eggs. Beat 3 minutes until light. Sift dry ingredients. Add alternately with water and lemon juice, mixing well. With a large spoon add carrots into batter. It will be a heavy batter. Spoon into well greased and floured 6 cup ring mold. Spread evenly. Bake at 350 degrees for 45 minutes or until firm to the touch. Unmold while still hot. Serves 10.
