MOM'S RICE PUDDING 
3/4 c. rice
3 eggs
1 qt. milk
1/2 tsp. vanilla
Sugar to taste
Pinch of salt
Cinnamon

Wash rice. In a saucepan put rice and cover with water; add salt and cook slowly over low flame until almost done. Add milk, cook until rice is done. Beat eggs well and gradually add to rice. Place back on stove, cook for 3 minutes, stirring constantly. Remove from flame, add vanilla and sugar, stir well. Sprinkle top with cinnamon and cool.
