PLUM JAM (LOW SUGAR) | |
This recipe makes a tart and natural tasting jam. It has about a third of the sugar that most recipes call for. 8 cups Italian plums 3 cups sugar 1/4 cup plus 1 tbsp. low-sugar pectin 1/3 cup plus 2 tbsp. lemon juice 1/2 cup water Pit plums and chop into small pieces in food processor. Mix plums, sugar, lemon juice and water in a large stock pot. Heat to a roiling boil on a medium high heat. Continue until the mixture starts to thicken and the sugar is completely dissolved. Add the pectin and stir for about a minute. Pour into hot pint size canning jars. Process for 10 to 15 minutes in a hot water bath. Enjoy!! Submitted by: Kathy Neal |
