IRISH PANCAKES | |
1 1/2 c. flour 1 tsp. baking powder 1 tsp. salt 2 tbsp. sugar 2 eggs, well beaten 1 1/4 c. milk or more 3 tbsp. vegetable oil In mixing bowl, combine flour, baking powder, salt, and sugar. In another bowl, combine eggs, milk, and oil. Stir into dry mixture. Add more milk to make a thin batter. Pour about 1/4 cup batter into lightly oiled skillet. Brown; turn and brown other side. Makes about 12-15 cakes. NOTE: Pancakes should be about 6 inches in diameter and very thin when done, almost like a crepe. Sprinkle with lemon juice and powdered sugar. Roll in cone shape. Serve immediately. |
