SWEDISH WEDDING PANCAKES | |
2 c. Bisquick mix 6 eggs 2 c. milk 3 c. sour cream 2 c. raspberry jam 2-3 tbsp. hot water Powdered sugar In a large bowl, mix Bisquick mix, eggs, and milk together until thin and without lumps (more milk may have to be added). Cook pancakes on medium to medium high grill (450 degrees) turning as soon as bubbles appear). These are supposed to be very thin pancakes and not cooked long - just barely golden brown. keep cooked pancakes warm in 200 degree oven until ready to serve. Warm 3 cups sour cream (may be done in microwave or on stove top). Warm raspberry jam and 2-3 tablespoons hot water together. Spread generous amount of sour cream on pancake and roll up. Place rolled pancakes next to each other on serving plate, spoon raspberry sauce over them, and sprinkle with powdered sugar. Serves 12 (2 pancakes per serving). |
