QUICHE LORRAINE 
Pastry for 9" one crust pie
12 slices bacon (1/2 lb.) crisply fried & crumbled
1 c. shredded natural Swiss cheese (about 4 oz.)
1/3 c. minced onion
4 eggs
2 c. whipping cream or light cream
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Heat oven to 425 degrees. Prepare the pastry. Sprinkle bacon, cheese and onion in the pastry-lined pie pan. Beat eggs slightly and blend in the remaining ingredients. Pour the cream mixture into the pie pan.

Bake 15 minutes, then reduce oven temperature to 300 degrees and bake 30 minutes longer or until a knife inserted 1 inch from the edge comes out clean. Let pie stand 10 minutes before cutting. Serve in wedges. (Great with a fresh fruit salad!)
