QUICHE LORRAINE 
Pastry 9 inch one crust pie
1/2 lb. bacon (crisply fried and crumbled) or cubed baked ham
1 c. shredded Swiss cheese
2 c. half and half
3/4 tsp. salt
1/4 tsp. sugar
Diced onions and cut up mushrooms to taste
4 eggs

Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon (or ham), cheese, onion and mushrooms into pastry lined pie pan. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 minutes. Reduce oven to 350 degrees. Bake at least 30 minutes longer (until knife inserted 1 inch from edge comes out clean). Let stand 10 minutes before cutting.
