BEEF - CHEESE CASSEROLE 
1 garlic clove, minced
3-4 onions, chopped
1 green pepper, chopped
3 stalks celery, diced
2 lbs. ground sirloin
4 (10 1/4 oz.) cans spaghetti sauce
Black olives, sliced
1 lb. Ricotta cheese
1 1/2 c. Mozzarella, shredded
1 pkg. Rigatoni pasta

Brown ground sirloin, garlic, onion, green pepper, and celery; drain well. Add spaghetti sauce and simmer 1 hour. Add black olives.

Mix 1 tablespoon basil with Ricotta. Cook pasta and drain. In casserole arrange 1/2 of the pasta, 1/2 sauce, all the Ricotta cheese, pasta, sauce, and top with Mozzarella. Bake at 325 degrees for 1 to 1 1/2 hours.

May be made a day ahead.
