LOTTIE MAE TINKER'S PURE EGG
NOODLES

Beat:

4 eggs

Add:

1/2 tsp. salt

Add flour to make a stiff dough. Divide into 2 balls or 4 balls. Roll real thin as possible, using plenty of flour so they do not stick. Then roll other balls same as first. Stack together and roll as jelly roll. Using a sharp knife, cut to desired width 1/3 inch strips. Sprinkle flour on paper on table, unroll strips and lay on table to dry out at least one hour or overnight.

Use chicken broth, beef broth or any broth you prefer. Add a few noodles at a time, shaking flour off before adding to juice. Cook 45 minutes or 1 hour slowly. Stir frequently. Once you have made these, you will not ever buy any more.
