VIOLET'S HOT WATER CORNBREAD
This is the BEST recipe that I have ever tasted for hot water cornbread!

1 cup cornmeal
1/2 tbsp. all-puropse flour
1/2 tsp. baking powder
dash salt
2 tbsp. sugar
2-3 cups boiling water (must be boiling)
canola oil to fry bread

Mix dry ingredients. Stir in the boiling water - mixture should be a little stiff, not soupy.

With a large spoon, get mixture from the top of the bowl (because the center will be hot) and make patties. Continue to make patties by getting the mixture from the top of the bowl.

In a hot skillet, heat canola oil and fry the cornbread patties. Enjoy!

I made this recipe with white corn meal. It made about as good a hot water cornbread as I've ever eaten.
