HOT WATER CORNBREAD 
2 cups white corn meal
1/2 cup flour
3 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoon baking powder

Put all ingredients in a large mixing bowl. Place a pot of water on the stove and bring to a rolling boil. Add boiling water to mixture, stirring constantly until you get a thick batter and all of the meal is moistened, but not too wet.

Cook in deep fryer at 375°F. If you put them in oil less than 300°F they will come apart.

Let mixture cool to a point that it can be handled without burning. Make into patties slightly larger than an egg and about a half inch thick. Wet your hands with tap water before making patties.

Drop in hot oil and cook to a golden brown. If they stick together in your deep fryer, allow them to cook for a few minutes then separate them with a couple of forks.

They may be cooked on the top of a store in a skillet with a small amount of oil, but I have discovered that a deep fryer works best. Ingredients may be adjusted to your individual taste.
