ROAST TURKEY BREAST WITH PEACH
SAUCE
 
1 (7 lb.) turkey breast
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried thyme
1/2 tsp. poultry seasoning

SAUCE:

1 tbsp. cornstarch
3/4 c. water
1 packet instant chicken flavored broth mix
1/4 c. reduced calorie peach spread (16 calories per 2 tsp.)
1 1/2 tsp. sherry or brandy extract
1 packet Sweet "N Low or sugar to sweeten

Preheat oven to 325 degrees. Sprinkle top and bottom of turkey breast with salt, pepper, thyme, and poultry seasoning. Place turkey, skin side up, on a rack, in a shallow roasting pan. Roast 2 1/2 hours or 20 minutes per pound. If using a meat thermometer, roast until the internal temperature reaches 190 degrees.

Remove and discard skin before slicing. Serve desired amount. Just before serving, prepare sauce: Dissolve cornstarch in water in a small saucepan. Add broth mix and peach spread and mix well. Bring sauce to a boil over medium low heat, stirring frequently. Boil 3 minutes, stirring constantly. Remove from heat and stir in extract and sweetener. Spoon over sliced turkey. Makes 8 servings.
