PUMPKIN BREAD | |
3 1/2 c. flour 2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 3 c. sugar 1 c. Puritan vegetable oil 4 eggs, beaten 3/4 c. buttermilk 1 tsp. vanilla 1 tsp. butter flavoring 1 (16 oz.) can pumpkin 1 c. raisins, floured 1 c. chopped pecans In a large mixing bowl, sift together flour, soda, salt, cinnamon and nutmeg. Add sugar, oil, eggs and buttermilk; mix well. Stir in flavorings, raisins and pecans. Pour into 2 greased 9 x 5 x 3 inch loaf pans or four 7 1/2 x 3 1/2 x 2 1/2 inch pans. Bake at 350 degrees for 60-65 minutes for 2 loaves or until bread tests done. 4 loaves about 50-55 minutes. Let stand 10 minutes before removing to wire racks for cooling. Freeze well. Ideal for taking as a gift or to someone special. |
