OATMEAL MUFFINS 
1 c. rolled oats
1 c. sour cream
1/3 c. melted butter
2 eggs
1 c. light brown sugar
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Combine oats and sour cream. Stir in butter, eggs and brown sugar until well mixed. Combine flour, baking powder, soda and salt. Stir into oatmeal mixture just until blended. Divide into greased or paper-lined muffin tins. Bake at 375 degrees for 20 to 25 minutes. Cool on wire rack. Makes 1 dozen.
