PUMPKIN - OAT MUFFINS 
1 1/3 c. oat bran
1 c. rolled oats
1 1/4 c. skim milk
3/4 c. wheat flour
1/2 c. brown sugar
1 tbsp. baking powder
1/2 tsp. salt
2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
3/4 c. canned pumpkin
2 lg. egg whites
1/2 c. raisins
2 tbsp. oil

Preheat oven to 400 degrees. Spray muffin pan with nonstick spray. In large bowl, combine oat bran, rolled oats and milk; set aside.

Combine flour, sugar, baking powder, spices and salt. Set aside. In medium bowl combine pumpkin, egg whites, oil and raisins. Stir into oat mixture until blended. Add flour mixture, stirring just until dry ingredients are moistened. Spoon into pans. Bake at 400 degrees for 20-25 minutes, until lightly browned. Makes 12 servings.
