PRUNE SPICE CAKE | |
1 lb. dried prunes 2 c. all-purpose flour 1 1/2 c. sugar 1 1/4 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. cloves 1/2 c. nuts 1/2 c. salad oil 3 eggs Cover prunes with water and simmer 20 minutes or until tender. Do not sweeten. Drain, reserving 2/3 cup of liquid (add water if necessary). Pit and chop prunes. Sift together dry ingredients, add prune juice and salad oil. Mix to blend and beat 2 minutes. Add eggs, beat 1 minute. Stir in prunes and nuts. Pour into greased, floured 13x9x2 baking dish. Sprinkle with crumb top then nuts. Bake 350 degrees for 35 minutes. CRUMB TOP: 1/2 c. sugar 2 tbsp. flour 2 tbsp. butter 1/2 c. nuts Mix all together. |
