PORK CAKE 
2 lb. brown sugar
2 lb. raisins
1 lb. ground pork or 1 c. lard
2 1/2 c. hot coffee
8 - 9 1/2 c. flour
1/4 tsp. salt
1 tsp. allspice
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tbsp. baking soda

Melt lard with hot coffee. Add soda. Stir in sugar and spices. Add raisins and flour. Should be stiff dough. Line and grease loaf pans with wax paper. Can be frozen after baking. Bake at 325 degrees about 40 to 45 minutes. Makes 3 pans.
