BARBECUE BEANS | |
2 c. cooked dry or canned beans 4 slices bacon 1 med. onion, chopped 1 clove garlic, minced 1/4 tsp. salt 1/4 c. water 1/4 c. ketchup 2 tsp. cider vinegar 2 tbsp. brown sugar 1 tsp. prepared mustard 1/2-1 tsp. chili powder 1/4 tsp. pepper Dash liquid smoke Fry bacon until crisp; drain on paper towels and crumble. Remove all but 1 tablespoon bacon drippings from skillet. (Or remove all and add corn oil.) Saute onion and garlic until onion is tender, but not brown. Add to beans along with bacon. Stir together remaining ingredients and add to beans. Cover and simmer 20 minutes, adding more water if needed. Serves 4. |
