LEMON BARS 
1 c. all-purpose or unbleached flour
1/4 c. powdered sugar
1/2 c. butter
2 eggs
1 c. sugar
2 tbsp. flour
1 tbsp. grated lemon peel
1/2 tsp. baking powder
2 tbsp. lemon juice

Heat oven to 350 degrees. In large bowl combine flour and powdered sugar; cut in butter until crumbly. Press flour mixture into ungreased 8 or 9 inch square pan. Bake at 350 degrees for 15 minutes.

In small bowl beat eggs and sugar until light colored; stir in remaining ingredients. Pour egg mixture over partially baked crust. Return to oven and bake 18-25 minutes or until light golden brown. Cool completely. Sprinkle with powdered sugar. Cut into bars. Makes 24 bars.
