MOCK APPLE RINGS 
15 lg., mature cucumbers
2 c. pickling lime
8 1/2 qt. water
2 c. red hot cinnamon candy
2 c. water
1 c. vinegar
3 oz. red food color
8 1/2 qt. water
3 c. vinegar
12 c. sugar
6 sticks cinnamon, broken

Peel, core and slice cucumbers. Mix lime with water. Add cucumber rings and soak overnight.

Meanwhile, mix candy with 2 cups water. Let stand overnight to dissolve. Drain cucumbers. Rinse, soak in clear water 3 hours. Drain. Simmer together 1 cup vinegar, food color and 8 1/2 quart water. Pour over cucumbers. Let set 2 hours. Drain. Discard brine.

Combine vinegar, sugar, cinnamon sticks and cinnamon candy solution. Bring to boil, stirring to keep from sticking. Pour over cucumbers, let stand 1 day. Pour off syrup and reheat. Pour hot syrup over cucumbers and let stand another day.

On the third day, pour off syrup, reheat to boiling again. Pack cucumber rings in sterile jars. Pour hot syrup over them and seal jars.
