MOCK ENCHILADAS 
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 sm. can diced jalapeno peppers (mild, med. or hot)
2 cans enchilada sauce (mild, med. or hot)
2 lb. ground beef
2 lb. Cheddar cheese
1 lg. bag Doritos corn chips

One 9 1/2 x 11 inch cooking pan. For more "Mock Enchiladas" just increase all ingredients by the same amount.

Fry hamburger until brown. Mix soups, jalapeno peppers and enchilada sauce together in bowl. Grate cheese. Smash chips into small pieces.

Layers - chips; hamburger; sauce; cheese. Repeat layers until pan is full. Last ingredients will be sauce with cheese on top. Bake at 350 degrees until done (about 20 minutes).
